Американский хлеб и хлебобулочные изделия отличаются от традиционных русских сортов хлеба; белый хлеб [white bread] выпускается для поджаривания гренков, очень мягкий, воздушный, в неподжаренном виде почти безвкусный - (ср [ Wonderbread]); серый хлеб обычно выпускается в виде караваев, и в нем используются пищевые красители; черный хлеб [ pumpernickel] - с добавлением крупных зерен. Хлеб продается нарезанным ломтиками, в полиэтиленовой упаковке. Среди известных фирм по производству хлебопродуктов: "Американ бейкериз" [American Bakeries Co.], "Интерстейт бейкериз" [ Interstate Bakeries Corp.], "Континентал бейкинг" [Continental Baking Co.], "Ороуит" [Orowheat Foods Co.], "Пепперидж фарм" [ Pepperidge Farm Co.] и др. Колонисты употребляли в пищу три типа хлеба: хлеб индейского типа, из кукурузной муки на воде с солью [pone, Indian bread, pone bread, corn pone]; тот же хлеб, но более вкусный, приготовленный на молоке и с яйцами [ corn bread] и бурый хлеб, известный в Новой Англии [ New England] под названием "рожь-с-индейцем" [ rye'n'Injun]. К середине XIX в. после появления пищевой соды - бикарбоната натрия [baking soda] (до него использовался бикарбонат калия) - появился черный хлеб [brown bread]. При употреблении белой пшеничной муки вместо ржаной появился хлеб, известный под именем "Анадама" [ Anadama bread] - уже на дрожжах, затем "воздушный хлеб" [aerated bread], при печении которого выделявшиеся пузырьки углекислого газа делали хлеб легким [light bread]. В 1850-х годах появился разрыхлитель [ baking powder], смесь бикарбоната натрия и кислой соли, и мука с примесью разрыхлителя [self-rising flour]. Это постепенно привело к вытеснению домашнего хлеба хлебом, выпеченным в промышленных пекарнях, и к 1880-м годам хлеб из пекарни [store-bought bread, bakery bread] вытеснил хлеб домашней выпечки, хотя белый хлеб [white bread] сначала не пользовался успехом, поскольку казался слишком легким и безвкусным. Проблема была окончательно решена перед началом первой мировой войны с появлением тостера [toaster]
